Sweetened with mirin and given a little kick with sake, this sauce is used for dipping raw or cooked fish and grilled or deep-fried vegetables. You can also serve it as a sauce for tofu: just put tofu cubes in a serving dish and surround them with the cold sauce. The ginger isn’t used in traditional recipes, so if you don’t like it, leave it out.
