This sauce is familiar to most of us since it contains the essential elements of Asian dipping sauces—fish sauce, lime juice, and something to provide heat. Serve this with grilled chicken or fish.


  • 2 cloves garlic, minced
  • 4 Thai chiles or 2 serrano chiles, stemmed, seeded, and minced

Combine all the ingredients and stir long enough to dissolve the sugar.
