This is a classic risotto and one of the easiest to make. Traditional recipes call for capon broth, but good homemade chicken broth can be used.

Ingredients

  • 2 tablespoons butter
  • 1 small onion, minced
  • 1 cup Arborio

Method

In a large saucepan, melt the butter over medium heat. Add the onion and cook, stirring often, for about 10 minutes, or until translucent. Add the rice and cook, stirring, for about 3 minutes, or until slightly opaque.

Add 2 cups of the broth and cook, stirring, just until the broth is absorbed
