The secret to making light, fluffy rice is to use the right kind of rice—look for basmati or jasmine, which both have a rich, nutty flavor—and to cook it in a large amount of boiling water, in the same way you cook pasta.
In a large pot, bring about 6 quarts water to a boil. Meanwhile, pour the rice into a strainer and rinse under cold running water until the water runs clear.
When the water is boiling, add the rice and boil for about 12 minutes, or until just tender (taste a grain; it should be tender but still slightly firm). Drain in a large strainer and let rest for about 10 minutes before serving.</
