Making a basic biscuit dough is similar to making a pie dough. The difference is that biscuit dough calls for more liquid and for baking powder, which makes the biscuits rise in the heat of the oven. These biscuits are leavened with baking soda instead of baking powder because of the acidity of the buttermilk, which makes the tartaric acid in the baking powder superfluous.
