This bread is made in the most direct way: the ingredients, including the yeast, are simply combined and the dough is allowed to rise. The way to vary the flavor and texture when using this so-called straight dough method is to use different amounts of yeast added at the beginning. It may take some experimentation to get both the dough and the finished bread to follow your schedule, but ideally give the dough as slow a rise as you can accommodate.
