In an effort to get the most flavor from flour in the shortest time, bakers often use what is known as a sponge, which is what is used for this bread. A sponge contains part of the flour called for in the recipe and may contain all or most of the liquid and some or all of the yeast. Because this bread is meant for sandwiches, milk is added, which makes the crust softer and easier to bite through.
