This is both the natural starter and the sourdough starter called for in the recipe that follows, depending on whether you feed the seed culture after it froths or before it almost dies.

Ingredients

  • 1 ½ cups flour
  • 1 cup finished seed culture (opposite)

Method

Put the flour in a bowl, pour the seed culture over it, and stir to combine. Pour the water over the mixture and stir to combine (mixed method only). Add the yeast mixture if you’re using it and mix until all the flour is moistened. Using a stand mixer fitted with the paddle blade, knead for 2 minutes to moisten the flour further.
