This basic dough is made with a yeast or a starter. It contains olive oil, which provides flavor and makes the crust not quite as hard. The dough is quite sticky. If it is too difficult to manage, sprinkle a little extra flour over it, but avoid this if you can.

Method

Review the steps for bread making before beginning. Combine the flour, water (if using yeast), yeast or starter, and the oil in the bowl of a stand mixer. Fit the mixer with the dough hook and mix on low speed for 2 minutes to moisten the flour. Cover the bowl with a damp towel or with plastic wrap and let rest for 20 minutes. Sprinkle the salt over the dough
