A coffee cake is kind of a cross between cake and bread. The cake part contains butter, sugar, eggs, and flavorings, while the bread part contains the flour and yeast. Before baking, these two mixtures are combined. A third mixture, a streusel, tops the cake.

To make the sponge, in a small bowl, sprinkle the yeast over the milk and let soften for 3 minutes. Put the flour in another bowl, pour the yeast mixture over the flour, and whisk to combine.
