A coffee cake is kind of a cross between cake and bread. The cake part contains butter, sugar, eggs, and flavorings, while the bread part contains the flour and yeast. Before baking, these two mixtures are combined. A third mixture, a streusel, tops the cake.

To make the sponge, in a small bowl, sprinkle the yeast over the milk and let soften for 3 minutes. Put the flour in another bowl, pour the yeast mixture over the flour, and whisk to combine. Cover with plastic wrap and let rise at room temperature for about 45 minutes, or until at least doubled in volume.
