Cinnamon rolls are made much like coffee cake, but instead of scattering streusel on top, the dough is rolled out into a rectangle, a filling is spread on it, and then the dough is rolled up and sliced.
To make the dough, first make a sponge. In a small bowl, sprinkle the yeast over the milk and let stand for 3 minutes, or until softened. Put 2 cups of the flour in another bowl, pour the yeast mixture over the flour, and stir to combine. Cover with plastic wrap and let rise at room temperature for about 30 minutes, or until increased in volume by about 50 percent.
