A classic apple pie is made with unsweetened pie dough, but a sweetened pie dough also works well. If you have access to tart local heirloom apples, use them. Otherwise, Granny Smith or Golden Delicious is the best choice.

Method

Have ready a 9- or 10-inch glass or metal pie plate. Roll out half of the dough into a round about 4 inches larger in diameter than the pie plate and line the plate by simply pressing the dough against the bottom and sides. Refrigerate the pie crust while you prepare the apples.
