There is no cornstarch in this recipe to thicken the liquid the berries release. Instead, the berries are held together by the natural pectin they contain, which binds them up nicely if the pie is served cold. They are also precooked, as described.



Have ready a 9- or 10-inch glass or metal pie plate. Roll out the dough into a round about 4 inches larger in diameter than the pie plate and line the plate by simply pressing the dough against the bottom and sides.
