How long it takes for shaped croissants to rise before baking depends on the temperature of their environment. You can shape them the night before, let them rise a little bit at room temperature, and then refrigerate them so they are ready to bake when you get up in the morning, or you can let them rise at room temperature in just about 2 hours. If you don’t want to make the full batch of 18 croissants, use only part of the dough and freeze the rest. But don’t freeze it for too long. The ye
