Biscotto and biscuit both mean '“twice cooked”; the closest equivalent in English is a rusk. Here, a basic dough is mixed in a stand mixer or food processor, and then hazelnuts, dried fruit, and candied orange rind are stirred into it. The spices used to flavor these biscotti are similar to those used to flavor panforte, the dense medieval cake sold at Christmastime in Italy.
