These classic bar cookies are made by pressing a buttery sweet pastry dough into a baking pan, baking it, letting it cool, and then spreading lemon curd on top. Most lemon curd is made with whole butter. Here, brown butter is used for a more pronounced butter flavor and a stiffer curd, but whole butter works fine, too.

  • cup cake flour

Method

To make the dough, combine both flours, the sugar, and the salt in a food processor and process for 15 seconds, or until well mixed. Add the butter and egg and process for about 20 seconds, or until the dough comes together in a ragged mass. Remove from the processor, shape into a disk, wrap in plastic wrap, and chill for 15 minutes.
