Beth’s California Pita Sandwiches with Hummus

This is probably my wife Beth’s favorite sandwich, even though she’s not a vegan. The first time she had it, we were on vacation in Lake Tahoe. The weather was as beautiful as the scenery, so we ordered sandwiches for lunch and then picnicked on the beach by the lake. There we were, sitting on a sheet on the sand and looking at snow-covered mountains across the pristine lake. This sandwich reminds her of that awesome vacation.
