This recipe is for flank steak, but you can also use New York cut shell steaks, sirloin, or my own favorite, filet mignon. If you use shell steaks or filet mignon, you won’t have to marinate them—just oil, season, and pan-sear them. Whenever I add red meat to a salad, I like to use sweet potatoes. They lend color and sweet flavor, they’re healthy, and they mix well with almost any kind of salad dressing.
