Spaghetti squash is a versatile and colorful vegetable. I like to use it as a bed for a variety of entrées, such as Short Ribs of Beef with Pepperoncini. When it’s cooked, the flesh can be spooned out of the skin in strands that look very much like spaghetti. This dish reheats well, and its flavor can be changed by adding various ingredients such as diced tomato, chopped basil, and minced garlic to the mixture.
