  • About

My mother-in-law used to make this dish very often for Sunday dinner in the summer, and now John “Freddy” Horan of E-319 makes it all the time, too. I’ve always loved it. Serve the pie as either an appetizer or as a side dish.

Ingredients

  • 3 cups quartered and sliced zucchini
  • 1 onion, diced
  • 1 cup B

Method

Preheat the oven to 375 degrees.

In a large mixing bowl, combine the zucchini, onion, Bisquick, eggs, oil, Romano, garlic, parsley, basil, and red pepper flakes (if using) and mix thoroughly but gently. Transfer the batter to a 9-inch round baking dish.
