Delightfully old-fashioned cookies that deserve to be served more often, hermits may be made in a variety of ways. This version is made as a drop cookie, but others (don’t miss Betty Shaw’s Hermits in How to Bake) are made as bar cookies, and cut after they have baked.

Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon

Method

  1. In a large bowl, combine the flour, baking soda, salt, and spices; stir well to mix.
  2. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together the butter and brown sugar until combined. Beat in the egg until the mixture is smooth.
