The craggy appearance of this cookie suggests a little stone, which is why they are called rochers (or “boulders”) in French. These are a good way to use up leftover egg whites, though they are so good, you might want to make them when there are no egg whites to use up.

Ingredients

  • 3 large egg whites
  • Pinch salt
  • ¾ cup sugar

Method

  1. Set the racks in the upper and lower thirds of the oven and preheat to 300 degrees.
  2. Half-fill a medium saucepan with water and bring it to a boil over medium heat.
  3. Combine the egg whites, salt, and sugar in the bowl of a standing electric mix
