Any recipe is always dressed up by the aromatic flavor and striking appearance of pistachios. Here, the nuts are in a meltingly tender dough and create a delicious cookie. Make sure when you bake the cookies to leave them pale, or the color of the pistachios will be obscured.

Ingredients

  • cups all-purpose flour
  • ½ cup cornstarch
  • ¼ teaspoon

Method

  1. In a bowl, combine the flour, cornstarch, and salt; stir well to mix.
  2. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together the butter and confectioners’ sugar at medium speed until well mixed, about a minute.
  3. Beat in the egg yolk and lemon zest until they are well incorporated and the mixture is smooth. Scrape the
