Think of this as making your very own brand of “slice and bake” cookies, but with better ingredients than you find in the prepared supermarket dough. Of course all refrigerator cookies are slice and bake but, for some reason, it’s always more reassuring to have almost-instant chocolate chip cookies.

  • ¼ teaspoon baking soda
  • ¼ teaspoon

Method

  1. In a bowl, combine the flour, baking soda, and salt; stir well to mix.
  2. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together the butter and sugars on medium speed until well mixed, about a minute, then beat in the vanilla.
