This is an extremely dark and chocolaty cookie for one made with cocoa powder rather than melted chocolate. Though the cookie is splendid on its own, I also like to add nuts or chocolate chips to the dough, just for variety.

Ingredients

  • cups all-purpose flour
  • cup alkalized (Dutch process) cocoa powder, sifted after measuring
  • ½

Method

  1. In a bowl, combine the flour, cocoa, baking soda, and salt; stir well to mix.
  2. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together the butter and sugar on medium speed until well mixed and fluffy, about 4 or 5 minutes, then beat in the vanilla and egg. Continue beating until the mixture is very smooth, about 2 minutes longer
