Chocolate Shortbread

This is an interesting variation of the classic Scottish shortbread. One word of caution: Unlike the plain shortbread dough, this dough needs to chill thoroughly before being rolled.

These are wonderful plain and also good sandwiched with melted milk chocolate or any of the filling suggestions.
