These rich cookies can be cut out in a variety of ways. Diamonds, as in the directions below, are always pretty, but you can also cut them with any kind of decorative cutter you wish. They also make good bases for the icings and glazes.

Method

Set racks in the upper and lower thirds of the oven and preheat to 350 degrees.
In a bowl, combine the flour, salt, baking powder, and baking soda; stir well to mix.
In the bowl of an electric mixer fitted with the paddle attachment, beat tog
