Supposedly these cookies got their name from their postbaking coating of sugar, which gives them a sandy texture. This recipe comes from a great friend and cookie lover, Peggy Tagliarino.

Ingredients

  • 16 tablespoons (2 sticks) unsalted butter, softened
  • ½ cup sugar

Method

  1. Set racks in the upper and lower thirds of the oven and preheat to 325 degrees.
  2. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together the butter, sugar, and salt on medium speed for 5 to 10 minutes, until very light,
