These lovely Italian macaroons are amusingly sometimes known as brutti ma buoni: ugly but good. (Spumetti actually means “little foamies,” referring to their texture.) There are several different ways to prepare this Italian classic, though this is the easiest. The recipe comes from The Cookie Lover’s Cook Book (Harper Perennial, 1986), by my late friend Richard Sax
