These are another variation on Payard’s Smooth French Macaroons. They are exquisite, a high-class version of the standard American coconut cookie.

Ingredients

  • cups confectioners’ sugar, divided
  • 6 ounces (about 2 cups) unsweet

Method

  1. In the work bowl of a food processor fitted with the steel blade, pulse the confectioners’ sugar with the coconut repeatedly for 3 or 4 minutes. The coconut should be ground very fine and there shouldn’t be any discernible pieces of coconut left. As you are grinding, stop the machine occasionally and scrape down around the inside and bottom of the work bowl with the end
