These are not the twice-baked biscotti, which appear in the next chapter. Here, the word just means “cookie.” They are a specialty of my friend Sandy Leonard, who lives in Boston. They are a tender and tasty cookie, unusual in that they contain both wine and olive oil. Make sure you don’t use either your best or your most robustly flavored oil for the cookies. Light or pure olive oil both work well.
