Shortbread Gems

This is another cookie made in a mini muffin pan. Delicious as is, it may also be indented after it cools slightly to become a container for some reduced jam, Lemon Curd, or even Ganache for Filling Cookies. Thanks to Jayne Sutton for another wonderful gem.
