These are one of those little cakes you always see in fancy pastry shops in France. There are dozens of different ways of preparing them but this recipe is a classic. It is loosely based on one I got in the early eighties from the Pâtisserie Ernest in Cannes.
Individual financiers are usually baked in small rectangular molds, but, lacking those, use mini muffin pans.
