These molded cookies are popular throughout the Low Countries as well as in Germany. They are called speculoos in Belgium and Speculatius in Germany, but apart from a few differences in seasonings, they are the same cookies. The name derives from the word for mirror and refers to the fact that the cookie “mirrors” its mold.
