No one seems to agree about exactly what—besides figs—goes into the filling for these classic Sicilian cookies. There are two distinct versions: One is for a small cookie, made from a filled cylinder of dough, as here, or formed as “ravioli” with the filling enclosed between two layers of the dough and shaped with a decorative cutter.
