The recipe for this Australian sandwich cookie was sent to me simultaneously by two different friends from Down Under—food stylists Janet Lillie and Maureen McKeon. The following is a combination/distillation of the two recipes.

Ingredients

Cookie Dough

  • 1⅓ cups all-purpose flour
  • cup cornstarch
  • ½

Method

  1. Set the racks in the upper and lower thirds of the oven and preheat to 350 degrees.
  2. Combine the flour, cornstarch, and baking powder in a bowl; stir well to mix.
  3. In the bowl of a standing electric mixer fitted with the paddle attachment, beat
