This is a fancy name the Swiss have given to a fairly simple cookie. It is composed of two diamond shapes sandwiched with a kirsch-flavored almond paste filling—definitely an adult cookie.

To cut these cookies into the traditional size and shape, you’ll need a 2- to 2½-inch diamond-shaped cutter, either plain or fluted. If you can’t find one, make a pattern from a piece of stiff cardboard; then you can use a knife to cut out the cookies, and they’ll be all the same size. Of course,
