This wafer is named after the former French royal palace in Paris. It was on the site of what is now the Tuileries Garden, adjacent to the Louvre, and also the former site of a roofing tile factory (see Tuiles), hence the name. Perhaps they were invented or prepared in the kitchens of that palace—or some enterprising pastry chef wanted to dignify his recipe with a noble name—no explanation was given with the recipe.
