These plain crackers are excellent with cheese or any type of spread and are better and more delicate than any crackers you can buy. The recipe is adapted from The Cookery Book of Lady Clark of Tillypronie (Southover Press, 1994), a reprint of the manuscript cookbook kept by the chatelaine of Tillypronie Castle in Scotland, first printed at the beginning of the twentieth century.
