This simple preparation has two purposes: to glue dough together and to help it take on a fine golden sheen while baking.

Ingredients

  • 1 large egg
  • Pinch salt

Method

  1. Combine the ingredients in a medium bowl. Use a small, flexible whisk to beat the mixture until it is very liquid.
  2. Pour the egg wash through a fine strainer into a 1-cup glass measuring cup. (A brush will stand up better in a cup than in a small bowl.)
  3. Use the egg wash immediately and discard any leftovers.
