This easy almond paste and butter filling goes well with any plain cookies. The kirsch helps to reinforce the almond perfume, but it is strictly optional. Marzipan used as a candy or cookie filling is traditionally colored a pale green—perhaps this is because it is the color of the outside of a freshly picked almond.

Ingredients

  • 4 ounces almond paste
  • 4 tablespoons (½ stick) unsalted butter, softe

Method

  1. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together on medium speed the almond paste and butter until soft and very light, about 5 minutes. Lower the mixer speed and beat in the confectioners’ sugar. Then raise the speed again and beat for another 2 or 3 minutes on medium speed. Beat in the kirsch, then stop the mixer and scrape down
