The best way to describe this filling is to say that it is an imitation of the white cream between such industrially made chocolate cookies as Oreos. This simple filling works best with not-too-sweet rolled or drop cookies.

Ingredients

  • 8 tablespoons (1 stick) unsalted butter, softened
  • 1 cup confectioners’

Method

  1. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter on medium speed until it is very soft and light. Gradually beat in the sugar and continue beating for another 3 or 4 minutes, or until the mixture is very light and fluffy.
