“Preserved lemons are a lovely condiment for adding a depth of lemony flavour to dishes. They’re traditionally used in Middle Eastern and North African cooking. You pickle or ferment the lemons in a brine of salt and lemon juice to preserve them. It’s a great way of using the whole lemon, but you can also make it just from the lemon rinds, after using lemon juice in other recipes. In this recipe, I’ve added herbs and spices to the brine to give a Moroccan flavour, but experiment with altern
