“Watermelon is so good. It’s refreshing on a hot day and honestly it’s just tasty. The lime and mint additions were inspired by non-alcoholic mojitos and I’ve used mint from my mum’s garden. I enjoy mocktails because they’re sweet, fruity and feel special.”

Ingredients

  • 1 medium-size watermelon
  • 2 lemons
  • 4 limes
  • 800

Method

  1. Chop the watermelon into chunks and remove the skin so that the chunks will fit easily into a high-speed blender. Add to the blender and liquidize.
  2. Pour the watermelon juice through a fine sieve/fine-mesh strainer into a large jug to remove the bits.
