Juno, a popular bakery, makes some of the best rustic breads in the city. The baker and pastry chef, Emil Glazer, is an ex-Noma chef and has kindly shared this recipe. You will need to cultivate the sourdough starter, which you can buy online or in healthfood stores.


  • 125 g sourdough starter (buy online)
  • 175 g sifted strong bread flour, plus extra for dusting

Day 1

Mix 325 ml (30–35°C/86-95°F) warm water, the starter and flours together. Rest for 30 minutes.

Mix the dough for 15 minutes until smooth and elastic, then add the salt and mix for 2–3 minutes. Put the dough into a lightly oiled bowl, cover and lea
