Juno, a popular bakery, makes some of the best rustic breads in the city. The baker and pastry chef, Emil Glazer, is an ex-Noma chef and has kindly shared this recipe. You will need to cultivate the sourdough starter, which you can buy online or in healthfood stores.

Ingredients

Biga

  • 1 tbsp sourdough starter (buy online)
  • 75 g wholewheat flour
  • 25

Method

Day 1: Biga (pre-fermentation)

Add 1 tbsp starter into 100ml warm water and mix to disperse the starter. Mix the two flours together, and then mix in to the liquid
