This basic Danish dough is made with yeast and can be time-consuming as it needs to rise. If you are in a hurry, use 500 g ready-made puff pastry instead. Adjust the fruits in the filling to suit to the season.
Gently heat the milk, sugar and salt. Combine the flours and yeast in a stand mixer fitted with the dough hook. Pour in the milk, then the egg and knead for 1–2 minutes, adding 1–2tbsp flour if needed. Leave the dough in an oiled bowl in a warm place for 1 hour.
