Homemade pickled white herring are used in open sandwiches. The basic spices are coriander, mustard seeds and cloves, but family recipes vary. More spices and other flavourings such as cinnamon, allspice, bay leaves and citrus peel may also be added.

Ingredients

  • 8 salted herring fillets, soaked in cold water for up to 6 hours, drained, and refrigerated until needed
  • 2 tsp coriander seeds

Method

Place herring in a bowl, cover with water and leave for 30 minutes. Rinse and pat dry on paper towels.

Meanwhile, add all the spices to a deep, dry frying pan and toast for 2–3 minutes. Add the vinegar, sherry, sugar, bay leaves, lemon zest and 150 ml water. Swirl the pan to dissolve the su
