The Danes have integrated spices such as cinnamon, cloves, black pepper and curry into their cuisine, especially with flavouring and preserving their beloved herring. This particular recipe is from Lise Rudolph, Christine’s grandmother.


  • 2 heaped tbsp mayonnaise
  • 100 ml crème fraîche or sour cream

Mix the mayonnaise and crème fraîche together in a small bowl. Add the curry powder and pickling liquid from the red herring. Taste and adjust the seasoning with salt and black pepper or a little more curry powder, if liked. Fold in the herring.
