The Pariser bof is a traditional lunchtime or dinner dish that has made a comeback in restaurants all over Copenhagen. It is 100 per cent good-quality beef, pan-fried and served on toast with pickled beetroot, horseradish, onions, capers, a pickle and a raw egg yolk.
Put the minced beef into a bowl and season. Divide into 4 portions and roughly shape into patties.
Melt the butter in a large frying pan, add the beef patties and cook for 1–2 minutes each side, keeping the meat rare inside.
Serve each patty on a slice of toast with a small amount of each of the accompaniments.
