Place the cucumber in a colander set over a bowl and sprinkle with the salt. Leave for 10 minutes, allowing the juices to drip into the bowl. Squeeze the cucumber with your hands to rid of any excess juices, then place in a bowl, add the sugar, vinegar, peppercorns and 100 ml cold water. Soak for 20 minutes before serving.
